Anethole is an organic compound widely used as a flavoring substance, and contributes a large portion of the flavor of anise, fennel, licorice, and tarragon. In making our Anethole vinegar, we begin by using PA potato vodka to extract the flavors from anise hyssop, tarragon, lemon balm, bronze fennel, green coriander, and a little bitterness from wormwood, fermented together about a year. We add this tincture to young fennel bulbs and apple cider, moving through the vinegar process and departing fully from alcohol ending in an ingredient that adds an absolutely fascinating fennel-licorice hit to anything it is added to. Great for cocktails or mocktails, for salad dressings, and roasted vegetables. Must love licorice!
