However, delicious, very high in sugar, and when fermented with red wine and the fig leaves, we are left with a truly unique and lingeringly delicious vinegar. Deep red, sticky fruit flavor from the figs combines with the coconut, vanilla, tropical flavors imparted from the fig leaves. Use this to dress roasted winter squashes, reduce for a glaze, make into a caramel…this one is a keeper for those fig lovers out there.
