Black walnuts are earthy and robust, with a flavor that is unlike other walnuts and difficult to describe. The closest comparison would be a truffle, for its fruity mushroom flavor and its divisive appeal. Black walnuts are traditionally used in baked goods like bread, pie, & cookies; recipes abound for their use in creative sweets, and it’s a good place to start. If you’re already familiar with the flavor of the nut, the miso can be folded into a chunky rice pilaf, pesto, or wilted greens.

Miso is not perishable, strictly speaking. All of our miso has fermented for months at room temperature. However, we do not pasteurize or treat the miso with ethyl alcohol to stabilize it, so its quality will suffer in warm, uncontrolled conditions.
